Unfortunately we cannot accept Debit card and EFTPOS transactions.. copyright 2010 Bluebank Farm Blueberry update. 2010 Base - Method Spray a 23cm spring form pan with cooking spray; line base and sides with baking paper. Crush biscuits in a food processor adding melted butter as you whiz until combined. Press mix into the base of pan with the back of a spoon. Chill. Put the water into a small saucepan and sprinkle over gelatine. Allow to stand 10 mins. Stir over very low heat just until gelatine dissolves. Set aside. Gently heat blueberries in a saucepan, stirring occasionally until juices are released. Cool. Strain and reserve 1/2 cup of the juice. Beat egg whites until soft peaks form, set aside. Beat together cream cheese, sugar, yoghurt, cream and 1T lemon juice until smooth. Add 1/3 cup of gelatine solution and mix in thoroughly. Combine remaining blueberry juice with blueberry solids and stir through the cream cheese mixture. Fold in the beaten egg white. Retain the remaining gelatine solution in a bowl over a saucepan of warm water to prevent setting. Pour cheese mixture onto the biscuit base and refrigerate until set, about 1 hour. Mix together the retained gelatine solution, reserved blueberry and lemon Juice. Pour over the top of the cheese cake, chill until set. Carefully remove from spring form pan, place on a serving plate and peel off the baking paper. Decorate with whipped cream and extra Blueberries.  Blueberry cheesecake by Glenis Thomas Base  250g pkt coconut biscuits 125g melted butter Filling 6 t gelatine 3/4 C water 500g cream cheese 2 T fresh lemon juice 75g caster sugar 1/4 C natural yoghurt 1/4 C thickened cream 2 egg whites 500g blueberries extra whipped cream and blueberries to decorate.  Blueberry update.
